Assuming spending thousands of bucks on a different diezel is out the question, I reckon you can get the mid cut sounds you want with some tweaking of overdrive pedals in front of the amp.

If the bass is bothering you, why not just dial back the Bass and Deep? I run both of mine very low.
+1 on the Mid Cut though...until just recently, I was only using it to spank up the clean channel but I have found that it is a very useful tool for making a more aggressive tone. Since the mid cut is centered at 400 Hz (IIRC) it is great for dialing in just a little to cut out some of the low mids.

So your Deep is at noon and channel Bass at or above noon - plus you are running a ported cab which further enhances the low end... no wonder you have tons of bass, you have literally done pretty much everything to get a massive low end save swapping it for a bass amp! (Kinda the same with your open-back 4x12, stood close to a wall that's sure going to project well and fill your room, since that's what it is for.)
