Surf 90 Kwikplug wiring help

Hello all, I am doing a pickup swap in a les paul style guitar for a friend and I need a bit of help. I have swapped pickups in guitars before, but I have never done one of these pickups with a 'kwikplug'.

The pickup has a removeable lead plugged into it with the wires coming out the other end. There are three wires, a red one, a white one and a wire not coated in anything, it's just silver wire.

The pickup that was in the guitar originally only had two wires as opposed to three. One going to a terminal on the pot and the other grounded to the back of the pot.

I'm not sure what to do with the extra wire... the instructions that came with the pickup state the red is the Signal +, the White is the Signal ground, and the 'black' is the Pickup shield ground.

I'm assuming the red goes to the pot terminal and the white goes to the back of the pot, but where does the other one go? Also to the back of the pot? What is a Pickup shield ground? Any help would be appreciated.
