Had an Eclipse that I couldn't bond with; Eclipse modes were too grainy and noisy, the 70's and 80's modes were kinda bland. The general consensus is that the regular Helios 70's and 80's modes are way better than the ones on the Eclipse model. I'm tempted to pick one of those up at some point..

I swapped in a quad of JJ E34L’s after one of the stock JJ EL34’s blew, a Gold Lion 12AX7 in V1, and a Sovtek 12AX7LPS in the PI slot. All other preamp tubes are the stock JJ ECC83s

The Hair and Hair+ switch settings seem to scoop the mids a lot, I can get a pretty brutal scooped tone especially on channel 1 Uber mode. My favorite amp ever is my Rev2, I set all eq knobs on that at 1:00, including gain, and that’s such a brutal tone. The Ultra can get pretty close to that...
It's definitely geared for "modern" metal more so than any other Uber; detuned, 7 string, djent/prog metal, etc. Swapping tubes makes a huge difference though. Put a quad of JJ E34L's in and it instantly sounded a lot more like the older Ubers. Came with six JJ ECC803s in the preamp, I swapped...
Umm… it’s not like there’s a ton of good current production preamp tubes available right now, they’re probably looking for something dependable at a decent price that they can get in big quantities to keep every amp the same. Not sure what people are expecting amp builders to use right now…
Comes with all JJ preamp and JJ EL34’s. I haven’t changed any preamp tubes yet, I’m sure putting some better ones in will improve the tone though, never like JJ 12ax7’s in anything
I should also mention that I had to swap power tubes already too haha. One of the stock tubes arced and popped a fuse after a few days. I swapped in a quad of JJ E34L’s and the amp immediately sounded chunkier and less ice picky/clanky.

I agree with pretty much everything you said. I got mine a few weeks ago and it took forever to dial in. I assumed the Uber mode on channel 1 and 2 would be the same, but like you said, they sound totally different. I’ll post pics of the settings I finally settled on when I get a chance.
Do you switch cabs a lot? I had the impedance selector switch break on my Rev2 once, it did the same thing you’re describing. I went to jiggle it and it popped out in pieces. Jorg sent me a new one no charge. I’m constantly switching mine though, so if you leave yours set on the same impedance...
