The 6P14P and EL-84L/7320 are basically the same tube.

7189's are a great choice, as are 6P14P's. These power tubes are spec'd for 400v operation as opposed to 300v with standard EL84's. That alone will extend your clean headroom a little bit when dimed.

If using a battery, put in a switch so you don't drain it. Also, don't forget the resistor(s) for the LEDs to knock down the juice a little bit.

On the back of the 3+ should be two 1/4" switch jacks to activate ch.2 and ch.3. There should also be a 1/4" jack to lift the eq (bit of a gain boost). If you're handy with a soldering iron, you could easily mod a standard generic 2-button ftsw to access all 3 channels. One button would toggle...

It's interesting how the color of wood changes with a clear finish. The Warmoths below L>R are walnut (clear nitro lacquer), mahogany (clear satin lacquer), southern ash (clear urethane), northern ash (clear oil).
