Dave Friedman has talked about Variac's and Eddies amp a couple times on Tonetalk.
I could have sworn he said the plate voltage was around 350V when the variac was set to 90V.
In any case, if ya want Variac tone, use a variac. :thumbsup:
TBH, if the SL68 is any indication, I'd just stick with your Variac set-up.
The Voltage selector on the SL68 should have been labeled "Tight" and "Mush"

The SL68 has a dual voltage secondary and a modified bias circuit with 2 bias trim pots.
I believe the dual secondary switching is done with a 3PDT power switch, with the 3rd pole switching the bias trimmers.
If a quality dual secondary power transformer could be sourced, a similar amp could be...
I could maybe see ch 1 being like the Princeton, and ch 2 like the JCM800.
Ch 3 has way more gain and bottom end than an 800.

The amp may have been designed to deliver 4 distinct tone types, but I doubt Peter actually based any of the channels on any particular amp.

THe MCII is more "Marshall-esque" than the MTL, but still different from a stock 2203 / 2204.
Main reasons are likely the 220pf treble cap + plate fed tone stack, and the lack of an un-bypassed cold clipper stage.
We all know Rick makes some killer amps, but I'm not convinced the world needs...
The laughable part is that ALL the 5150's and 6505's are EXACTLY the same, as long as the 6505 is a "made in USA" model.
I had a block letter 5150 and a mid 2000's 6505 on my bench at the same time, and did comparison clips using the same tubes in both amps, biased at the same mA, and the ONLY...
The new Kluson's would be my recommendation.

I've owned a PT100 and an OD100+, which are similar circuits, and Psycodave's assessment of those amps is valid. I'm not crazy about the SL68 either.
Sound great / feel like poo.
However, ya build that SE100 circuit on a turret board with a Metro C1999 OPT and it kills.

Go with the SE100 build. It's a killer circuit and very tweak-able. Your chassis has the 4th 12ax7 socket, and you've done the Jose thing already.

If you are looking for "barking midrange, pissed off Marshall", I'd stick with the TAD's Ceriatone uses as stock film caps in their British hot rod amps, or if it's a home build go with the TAD's or iC MPW.

Not sure any CP 6L6's are going to sound exactly like the winged C tubes.
The TubeStore Preferred series 6L6 are nice.
The TAD 6L6GC-STR are a copy of the old Sylvania's and sound good.
Sovtek wafer-based 5881's are great tubes as well, in the right amp.
Purchasing some bias probes and learning how to bias your amps is a worthwhile endeavor for sure. A properly biased amp will sound better.
As to your other points:
Speaker break-in: yeah, most speakers will sound brighter / a bit harsh until they have some miles on them. Most people know this...
