My go-to pick has been A Wegen Fatone 5mm for awhile now. But lately i've been really intrigued by the Ultex.
One of my students handed a 1mm to me. Instantly i noticed this material really SLICE the strings, nice bite catching onto the strings. I can get that Paul Gilbert swooshing scratch with fast picking with these picks.
So I went out and bought a batch of the various Ultex, some round and some sharp points, ranging from 1mm to 2mm.
First, who measure the thickness of these picks? they're totally not consistent from one batch to another. The 1mm round i got is way thicker than the 1mm sharp.
Anyway, will review some more when I get more playing time with them in the studio today.

I'm looking to try the Dunlop JP Signature too, which is made from Ultex as well. anybody rocking those?
