Classic French Beef Stew…

Been raining since last night. Temps are dropping. “Winter mix” this afternoon. 3 inches of snow Thursday into Friday. The Mrs. is scheduled for another surgery on Friday afternoon and lows at or below zero this weekend. Going to hunker down on hearty, filling food that has multiple “leftover” options.

I have the beef and vegetables prepped. Working with a well-loved Dutch oven.

Starting to brown the chuck roast…

Onions and garlic sweated with some tomato paste…

Browned beef added back to the mix…

Stirred in some flour to help thicken the mix…

 

[IndyWS6]

Beef stock, red wine and seasonings added…

Bring to a boil, move to the oven to braise for a couple of hours…

Just realized that I didn’t post a photo of the completed product. Just had a bowl of leftovers. Still tasty…
