OK, not really a “challenge” (we have it a couple times a month). The challenge is cost. Beef Tenderloin was $19.99/lb post-COVID and is now $32.99/lb. Fuck me… And, it’s subjective, but the cuts they put in pre-pack seem to be lesser quality. I have no problem buying and trimming a whole tenderloin when I’m going to use it all, but I don’t freeze steaks. I can tell the difference. When it’s just for the two of us, it’s pre-pack. Anyway, did the usual and basted with a butter and Zip Sauce reduction. Delicious…

I use my vacuum packer and freeze steaks and when handled properly, they come out 99% as good. Just in my experience.
