Mic-2 cabs, recording, recording interface,Laptop speed help

I have no experience with recording at all, what I am looking to do is mic 2 cabs with 2 different mic's and record.
I have already picked out the mic's (SM57's) but I will need help picking out the recording interface.
I don't need the most amazing high priced unit, but I also don't want to upgrade 1 year down the road because the first one I bought is not up to par.

I also want to know if my laptop is fast enough, I have a Macbook Air 1.4 GHz Intel Core Duo processor and 2 GN 1067 MHz DDR3 Memory.
It is a solid state hard drive, it only has USB inputs and has no disk drive.

Any help would be greatly appreciated.

Apogee Duet if you want a couple of preamps. If you want more preamps, the Steinberg mr816x is pretty good. Both can be found on the used market for relatively cheap.
