Switching Drop & Standard Tunings On My 6-String Electrics

I have some questions and was wanting to get some input/advice on switching tunings/setups on my guitars?

Our band currently plays in Drop B tuning and the 2 guitars I have setup for drop B tuning right now are my older heavy Epiphone les paul custom w/new seymour duncan hot rodded pickup set: JB-bridge/Jazz-neck and a 98 Gibson les paul special w/P-100's but the bridge was swapped out to a Dimarzio DP209 p90 super distortion. Both of those guitars are setup with the GHS boomers zakk wylde .010-.060 sets.

I think both guitars sound ok but not great, I play through right now a line 6 flextone 2 head and misc. 4x12's. I was thinking of putting the Gibson back up to 1/2 step below E tuning with a .010,.013,.017,.026,.036,.052 set of strings and then leaving the Epiphone in drop B still and put this set of D'Addario EJ22's .013-.056 w/wound .026 set on it. I also have a Ernie Ball musicman axis clone w/org. floyd rose in 1/2 step below E that I was thinking of taking down to drop B as well and I'm pretty sure it's 25.5 scale, I have an extra D'addario exl-110-7 .010-.059 7-string set I was thinking of putting on it and just not use the .010 so it'd be .013-.059

I'm even thinking of selling the Epi and getting something like this:
 
If you want a 7 go with the schecter, but keep in mind that Schecter also makes a baritone guitar.

Never played on a baritone before, is it a big jump from a 24 3/4 scale guitar like my Epi and can you still get the pinch harmonics easily?
 
Was looking at this Schecter Damien Elite-7 too, a lot better price range at $549 than the custom 7 at $749. Plus, I read somwhere the bolt on neck Schecter 7-strings have a thinner neck than their neck-thru's.

I have played with drop tunings for a long time and used to obsess over this shit with string gauges and all that and finally settled on one size fits all, from standard to drop A#. This came straight from Jim Root of Slipknot. 56/38/28/18/15/11. So, I went to the Ernie Ball website and ordered packs of 10 pack singles to make my own custom set of strings. Two more things....25 1/2" scale length is going to hold a drop tuning better than shorter lengths. And, string through bodies will better than guitars will a tailpiece. This is because with the slack, the tailpiece moves on the mounts. Tone Pro's makes some locking tailpieces which do a little better on Les Pauls trying to hold drop tunings.

I checked Schecter's website yesterday and they don't make baritone's anymore, the last one they made was the Hellraiser C1 EX baritone and it's been discontinued.
