What better way to boost your fat up for keto/carnivore when you're eating a lean piece of fish or chicken than make a thick, creamy sauce of nothing but fat?
I took some butter, fresh lemon, and fennel leaves from my garden since I didn't buy a dill plant. I smoked it at 220 for 45 minutes or so and then made up a batch of hollandaise and just spooned it over. Oh man the sauce is so creamy, buttery, with that hint of lemon in the background.
