The grain looks nice, it would do fine with a clear finish. I guess you have to decide if you're going to want a full on proper restore to build a museum piece, or if it's something you want to have fun with. If you're going to be all about the tone of the wood, then oil finish or a pro nitro job is in order. If not so much, then pick your favorite auto product. I've seen some older Ibby's where the paint is practically used as filler, it's so thick.
If it's super valuable and rare, then maybe go the restoration rout. If we're talking a relative value of oh, say maybe $1000-$2000, by painting it an outrageous color (if it's a quality job) is not going to detract from the value a whole lot.
