For the last 15 years or so, I have always had an EQ available because I am always running my amplification in 4CM with a Fractal (or similar) processor, but, for some reason, if I *have* to use even a little bit of EQ...

Leaving an IR on wouldn't sound harsh, it'd sound the exact opposite; like a blanket over the speaker. In general, the excessive filtering from an IR diminishes the sound of a cab because the cab is rolling off the same frequencies the IR is and they double down in an uncool way.

Before you give up on digital completely: buy a Kemper and compare your experience of not playing it versus not playing the Fractal. You may find that you have a strong preference for not playing one over not playing the other.
