I cut the strings to the right length (usually and inch or two past the tuner) and then put the end in the hole in the middle of the post. Then I bend it 90° out one of the sides and wind it up, making sure the next wind goes under the last. You guys and your "locking tuners" and "techniques"...

I got a Dalstrong Valhalla series chef knife, and it's changed my cooking. I've had it for months now and it's still as sharp as when I got it. I'm looking at getting a good boning knife now because I've been carving up chicken a lot lately. What do you guys have? What do you recommend?
