Some "Australian guys" say this is too much Vegemite. Well not for me as it's umami with the whole seed bread is devine with the eggz.

Agreed.

With my rabbit-food diet due to heavy-metal poisoning 'n' all, I get a craving for eggs every now and again.

It's always the same - scrambled eggs on buttered toast with a hint of Worcestershire sauce.

Do you not like runny yolks?
Good scrambled eggs are great too though.

Of course I like runny yolks!

Havent had a soft-boiled egg since last century 'though. Scrambled is easier-to-eat (knife & fork on toast), dose with sauce and toppings & whatnot is all.

Soft- boiled? What about sunny side up/over easy?
Dang, now i want eggs

That would mean I'd have to break out the frying pan and endure the subsequent fatty cleanup.

When I make scrambled I actually use a small glass pot and water instead of milk. No fat at all so cleanup is simple.

People put milk in scrambled eggs? Interesting.
I put only eggs in my scrambled eggs.

Well, my only experience is what I grew up with.

We didn't have money so maybe that's why my mom always put milk in it. I'd always assumed that this was normal.

FFWD to today and lo and behold, I've had no money for decades, so what do I do? Water instead of milk.

Now that's hardcore.

This stuff is interesting to me, Water or milk might make the eggs a little creamier that makes total sense.
Like making a hollandaise sauce, you start with egg yolks and water while whisking over heat. Eventually the water gets suspended in the eggs and gets super fluffy.

Yeah dunno about creamier.

It stretches your dollar is all that was relevant to my family back in the day and to me now.

IIRC the ratio my mom used was 2/3 eggs, 1/3 milk. I go 50/50 water and eggs.

Of course, I always add chopped onion to it while it's cooking.

We grew up poor too, so i get that part of it. Eggs were a rare treat.
The onion is very interesting. Hopefully you chop it small?

It doesn't really matter 'cause it softens easily in the time the eggs take to cook, but yeah, 1/2" pieces I guess.

I wonder if adding the water to the eggs bides you time to cook the onion? Which is genius when you think about it.
Eggs cook quicker than 1/2" onion pieces, generally. Is the onion soft, fully cooked?

Fully-soft.

I also put dried mixed herbs, a bit o' cayenne and a pinch of salt into the mix first.

Slap it onto buttered toast with a splash of Worcestershire sauce. Yummy.

Oh, and the juice from the water (some of it separates) soaks into the toast. Nooiice.
