I went to the store yesterday (I was off due to the politically correct “Spring Holiday”
) and got everything we need for the Easter menu. They had rib roasts on “sale” - at only 50% more than they should cost. I found a one bone roast that had decent marbling and carved it into steaks. Sir Elliott was the beneficiary of the bone and I froze the fat and trimmings to render later. The weather is going downhill fast, so this will be a cast iron skillet affair with roasted asparagus and baked potatoes…
