It all depends on what you want to do and what you're looking for. What kind of music will you be playing? This will influence the size and material of the shells and type of cymbals to get.
I don't know much about the quality of what's out there these days since I haven't looked at acoustic kits in over a decade. So I'll leave it to someone else to suggest a specific kit.
I'll say that you'll probably end up being better getting a full kit with all included than trying to piece something together. This will get you all the drums, hardware, stands, etc. you need and a couple of basic cymbals to get you going. Maybe go with a mid tier 5 piece set. You should be able to find something decent starting around $600-$700 or so. Regardless of what you get, swap out the top heads for something good. That can make or break how a kit sounds and the ones that come with them are usually junk. Eventually you'd probably want to upgrade the kick pedal and add extra cymbals. I wouldn't jump into upgrading those right away until you know more of what you want. They can be fairly expensive so you don't want to waste money buying those all willy-nilly.
