Smoked Pork Belly Burnt Ends

I’ve always wanted to give it a go but the local store rarely has pork belly in the display case. They did a few months ago, so I bought two and threw them in the freezer. We’ve been by the pool for three days straight, and tomorrow looks “iffy”, so I’ll break out the smoker. I got the belly trimmed, cubed and marinating with rub. Fingers crossed 🤞

Smoked for 3 hours. First blast was Mesquite followed by Apple wood. No need for more smoke, so they are covered and braising in the oven after being glazed with a gelatinous butter, honey and brown sugar concoction. In about 30 minutes, I’ll uncover them and glaze with Kinder Hot Honey BBQ sauce and let them crisp up. Lots of damn work, but it looks/smells promising…
