They focus on recovered wood if I remember correctly (I'm in the NYC area and have poked a head in before). So, closer to an art piece than something chosen for its tonal properties.
https://petilloguitars.com/ does something similar, though more focused on the art part than the wood. Actually famous for assembling Bruce Springsteen's #1 back in the day, which is a pretty straight forward build.
