So I kinda went one step forward and two steps back with my amp build last night, but at least my vision is getting clearer.
I tested the transformers out and it looks like the output transformer has around a 4K primary and also 4K secondary, which is not ideal for what I had planned lol.
But I think I can make everything happy by using a pair of 6v6 and an 8ohm speaker.

The PT is putting 407vdc on the plates with a GZ34 so I may end up backing that off a bit with a 5y3 if I go the 6v6 route

5y3 and 6V6 is a proven combination. Any idea what preamp tube(s) you'll use?

This will probably be 12ax7s across the board. One for gain stages, one for the trem and one for the phase inverter.

The last few builds I did have been 6sl7/6sj7 octal builds which I really like. I have a jtm45 chassis drilled for octals that I will probably get into next whenever the inspiration strikes.

The first 6sl7 amp I built was probably my best, but I gutted it like a dumbass lol

It was a rockin amp though
