So 311 boogieman posted up some sweet looking duck bacon, gave me a hankering.
Had a nice duck breast in the freezer, pulled it and thawed in fridge few days.
Went to process it today, and it's not duck breast.
It's duck legs.
I grabbed it without reading too close apparently.
Already frozen so can't refreeze without cooking them.
Duck legs require a much more involved process vs duck breast.
Legs are way tougher, it's all dark meat though.
But now i'm in it and i do love doing it- but it was not anticipated.
Cooking duck legs slowly in duck fat after an overnight cure, amazing results.
I'll try and document it, won't get to it until tomorrow maybe.
Need to buy duck fat.

But i feel dumb for grabbing the wrong thing.
Used to buy whole ducks from the grocery store, bring them home and process them and then save up a bunch of legs and make a big batch of confit.
By mistake I defrosted only 2 legs so small batch.
It's weird that i can't buy whole ducks, only breasts and legs separately.
I need to look into that.

Very interesting. What it your overnight cure? Like a brine?
Yes, a dry brine.
Salt
Pepper
Thyme
Garlic
Bay leaf

Before refrigeration this was done to preserve the meat, the fat on top would make it last longer. Really old stuff.
Having a tough time uploading pics from my phone right now.

Not sure if anyone noticed, but both of these duck legs are LEFT legs.
That duck must have been swimming in circles lmao.
Which is why I like to buy whole ducks, at least you know all the parts came from the same animal.
