inconsistent voice quality help needed, kinda long (sorry)

A little background, my voice goes from being pretty decent to downright not even tolerable by me and a joke.

By pretty decent I mean range and me able to tweak my voice how I want to get certain vocal styles. I can usually range from Bon Jovi style range and tone to metallica. It seems the past couple years my voice has become very inconsistent and I can't narrow down what is causing it to react this way. lets just say that if I try to sing anything in pitch higher than my normal talking voice, my voice breaks up, very much like axl rose. Not a bad thing if doing their stuff, but Its not intentional nor can I control the amount of breakup.

There are some main factors involved: alcohol, smoke, excessive use.

1) alcohol - I'm known to have a few beers at a show or in my recreation time. It usually helps with the metallica stuff. Yes I know alcohol is bad cause it dehydrates the vocal chords and such, BUT... I have tried switching to a more mixed drink and I have gone out singing karaoke with friends, or at shows I've played and only drank juice drinks, soda, water etc in an effort to alleviate this problem. Didn't matter. Very inconsistent, sometimes the next day i was fine, other times the next day my voice is just shredded.

2) smoke - I dont smoke, but there is smoke at some of the places we play at or hang out at. I've drank the other stuff listed in number 1 in a non smoking facility, and still ended up with the same inconsistent results.

3) excessive use - another inconsistency. I've gone out and sang two songs and had it shredded, i've been out bar hopping and singing metallica in the car all night, and its fine.

An extra note that I cannot seem to make sense of either: I just got back from my honeymoon the last week and half. Spent a week down in mexico. Your asking what does this have to do with my voice. The resort we were at had karaoke two nights. Being it was all inclusive, we were pretty much sucking down drinks from 9am til midnightish, not heavily, but consistently, never really drunk though. Anyway, went out to a couple of clubs in cancun, never had this problem down there drinking corona's and mixed frozen drinks. as soon as I entered the states and had a beer back home, i noticed a big change in how my voice reacted to have some extended conversations about my trip. But it never got to the point of being 'shredded'.

I am entering a 3 piece band where me and the bass player are going to be sharing singing duties and would like my voice to be at least more predictable or consistent. When I fronted a band years ago, i tried tea's, drinking water all the time during the day, neither of those would help...

You have likely developed some bad vocal habits. I am not a voice coach, but I did study with Maestro David Kyle, who also taught Geoff Tate, Ann Wilson, Don Dokken, Lane Staley, etc... I would find a GOOD vocal coach. There's a guy who pretty much took over for Maestro Kyle in Seattle, named Robert Lunte. He offers lessons online. You have to have a high speed connection, and a web cam. You may want to check it out.

Well I'm a singer, and I've taken vocal lessons extensively.... I think you are abusing your vocal chords.... with all the things you mentioned..... plus you could have developed a nodule.

Go to a GOOD vocal coach and take singing lessons....there are some AMAZING exercises for the vocal chords that will fix that and prevent from getting them again.

I bought an amazing book on singing and vocal coaching: "Set Your Voice Free - by Roger Love" it comes with a CD that has exercises for you to do everyday.....

If you'll be getting into singing duties, vocal lessons are a MUST if you wanna preserve your voice, and get it to do what it's supposed to do EACH night you're playing.

Maestro Kyle was charging $125 per 1 hour lesson, and you had to pay for 6 in advance. I would check The Vocalist Studio for their rates.
