Where can I source or make some feed-thru's for a rack interface I'm building for myself?

I've found 5-pin DIN feed-thrus, and panel-mount 7-pin din jacks, but no 7-pin feedthrus, and I'm not sure how I should wire two of the 7-pin panel mount jacks together properly.

Any advice, guys?

Cables are cables, make sure you connect the wire to the same opposite pins within the interface that's how you make your own feed through. I would recommend to use a 7 pin XLR male as your Midi IN from your pedal board.

Depends on the type of rack interface you build.
If it's a sealed metal box with a depth more than the standard feed through size you need to do your own. Feed through is basically a piece of wire (or wires in case of midi) connecting the opposite jack's lugs inside the box. By that you can connect your cable to the front, and the wires inside feeds through the signal to the jack on the other side of the box.
If it's like a D-shape panel, you can use any D-Shape feed thru like this http://www.neutrik.com/en/accessories/inline-adapters/na4mp-j
