Yeah, I know what you mean. JBJ's been doin' this for a while. You can tell he's using some "trained" vocal technique and of course the dodging strategies you mentioned to preserve his voice. I think I remember reading a while back that he blew his voice in the 80's just singing balls out every night and that he learned his lesson.
I just saw Sebastian Bach perform with Steve Stevens a couple weeks ago. He still has some good high notes but he picks and chooses where. He pretty much alters the melody to "I Remember You" now which like you said takes the wind of the sails.
Only guy from that era that comes to mind that still hits his stuff as good as ever is Michael Sweet of Stryper.
