Scalloped Potatoes

I was going to make some mashed potatoes today, but then i was thinking about scalloped potatoes.
I hadn't made scalloped potatoes in like 20 years probably. Always liked them so gave it a go.
Peel, slice some yukons, cook partway in salted water, cool.
For the sauce, i sweated down some mirepoix, heavy garlic. Then chix stock, reduce. Add heavy cream and herbs, reduce some more. Strain sauce and grate some cheddar cheese and add to taste. Pour sauce over potatoes, top with more cheese and bake until bubbly. Used the broiler to get some browning. The potatoes were soft but not falling apart.

I'll bet they were; you can't go wrong with them.

The best all-you-can-eat joint I know of had 'em for 10 years and then suddenly dropped the dish.

A few visits later, when I was sure it wasn't just an anomaly, I talked them into re-introducing them to the "menu".

My reasoning was thus:
They taste great and most peeps like 'em.
They're cheap-and-quick to make.
They fill peeps' bellies so they eat less.

They bought it! :rock:
