Baked Atlantic sockeye salmon filets with a cream cheese sauce on top. OMG...so rich and tasty.
I like keeping cream cheese around, and cream (as there are a million uses for cream) because it's an easy way to spike my fat macro while keeping the protein one down, compared to eating some cottage cheese for example. The other day I did my best to eat a whole brick of cream cheese mixed with some sugar free bbq sauce alongside my chicken breast, which is way lean.
I can supply whoever with the recipe, but basically you season (they use dill but I didn't have any) the filets, I used Cavendar's. Then you put 2 pats of butter on top and bake them over parchment paper. I mixed the butter, sour cream, and cream cheese with some seasoning in a saucepan and let it cook down and then poured the seasoned butter drippings from the pan into it, mixed it all up, and covered the salmon. I didn't have any lemons, which would have elevated it nicely, or the dill, but the seasonings I did use make it soooooo good.
