What’s a good PA I should look into buying?

One that can handle it all for live gigs. Big and small. Budget not a factor, but show me the high end one, then maybe the more budget alternative.

If budget isn't a factor then look into L Acoustics or d&b audio teknik ....

Other notable mentions would be RCF , fulcrum acoustics , danley , meyer ...

What type of music ?
What size rooms and capacity for coverage ?
 
The below will cover most small to medium sized venues, anything bigger and it will need scaling up.

Ultra High end

L’acoustics 112p and 15sb/18sb - powered which is convenient but adds weight but it’s a simple system that sounds incredible!

Meyersound

High end

Nexo PS10 with LS600 subs - a very portable and efficient system, small but it’s output is amazing, can be scaled up to great effect but needs amps and the nexo controller to go with them.

KV2 Audio - they do a range of powered stuff so have a look and fit to taste.

RCF TT range - very smooth sounding speakers that have plenty of clarity

Medium end

Yamaha DSR range/EV/RCF/Danley

Lots of factors unvolved from storage to powered/unpowered, multiple subs or just one again depends on the size of venue.
 
I have a couple friends that are sound engineers for a living. You think guitar rigs get expensive? Wait until you see how far down the rabbit hole goes with live sound gear.
