Second swing at this .. I was listening to Dire Straits, Telegraph Road. Great composition and three sections with a different mood each. Knopfler. Not for speed but for soul and always getting a great tone.

Oh Hell yeah!
Dire Straits rocks! Such great songs and I am envious of the soul that he puts in his guitar.

Randy Rhoads, diary of a madman
Judas Priest, screaming for vengeance
SRV, testify
and too many others to think of right now

So many i could list, but my alltime favorite solo is by John Sykes on 'Looking For Love' from 1987 (Whitesnake). His playing is so melodic on that tune it's unreal!

Randy Rhoads- Revelation, Goodbye To Romance
Nuno Bettencourt- Get The Funk Out, Warheads
Van Halen - Outta Love Again,Secrets
Schenker -Captain Nemo
Joe B- Never Make your move too soon
Blues Saraceno- Just about anything
Best 80's hair solo Wait- Bratta

You could go on forever here...

There's a lot of great solos here!

Hard to pick just one, but I would have to say something Gilmour, something Hammet, something Tabor, and Something Petrucci.

Mother
Unforgiven (I know, he actually wrote a good solo! :D )
Probably Take it Back from the Rock Garden Album, but just about anything he does is great to me.
Any number of solos from Falling into Infinitiy, but Trail of Tears is the highlight of that album for me.

Lucretia - Marty Friedman (Megadeth)
Big Trouble - Eddie Van Halen (unreleased)
Big Trouble - Steve Vai (with DLR)
Spanish Castle Magic - Greg Koch
Analog Kid - Alex Lifeson (Rush)
Last in Line - Viv Campbell (Dio)
Pretend - Ty Tabor (King's X)

...a few that come to mind.

if this double posts, i apologize.

schenker: lights out (95 re-recording)/bijou pleasurette
roth (u): sails of charon/still so many lives away
blackmore: burn/anybody there

moore (g) : shapes of things/emerald
holdsworth: in the dead of night/hells bells
gatton: melancholy serenade/harlem nocturne
buchanan: sweet dreams/the messiah will come again
thrall: i got your number/first step of love (volume swell parts)
johnson (e) zap/cliffs of dover

Cantrell AIC-Nutshell, Sunshine, Rotten Apple, Man In The Box etc.
Wilton/DeGarmo Queensryche-pretty much all of Mindcrime and Empire-brilliant
Gilmour-Comf. Numb, Time, The Turning Away, Sorrow, Money
Slash Gn'R- Sweet Child, The Garden-WAY under-rated solo!
Most of Marty Friedman's Megadeth stuff (except Risk)
Alter Bridge-Myles Kennedy and Tremonti play an amazing solo on the song Blackbird
Dime on Floods, 10's, Planet Caravan and tons of others
Vai-For the Love of God
Lots of others by VH, EJ, SRV, Eagles, Rhodes, Jake E. Lee, Blackmore, and even a couple by Clapton, though he's way over rated.

Here's a few for now:
Frank Zappa- Ship Ahoy

Steve Vai- Wire and Wood @ 1:49

Gary Moore- The Law of the jungle @ 3:24

Marty Friedman- Captive Honour @ 3:44

Andy Timmons- Cry For You (The Whole Thing)!!!!

Joe Satriani- Time @ 3:10

Jake E Lee- Now you see it, now you don't @ 2:29
