I'm sure you picked up on me making a joke at Dan about handling "meat." So no disrespect to butchers by trade.
My paw-paw was a butcher for all his working life. I forget when he started but it was really young; late teens or early twenties. Unfortunately I was too young when he passed to really learn some skills from him. I wish I had more opportunity to do that; especially since I've come into my own with cooking from scratch. Locally his hog head cheese recipe is highly sought after. (I don't know if you know who John Folse is, but he's coveted my paw-paws recipe.) He taught it only to my dad and my dad passed it to me. We're the only ones who know how to make it and it stays in the family for now. We do make large batches of it around Christmas time and give it out to family, friends, and special requests. I'll eventually have to find someone worthy of keeping the recipe going since I won't have any children and that family lineage dies with me (TMI, but my wife is unable to have children).
