Homemade bean sauce.
onions
The usual meat rubs
Soy sauce.
A splash of Jack Daniels
And i thought i had cherry peppers but ran out.
So i used the next best thing
Tabasco Sauce.

Added some salt and that was it

Oh I see what you are doing now with the briquettes. I think. You use the gas to get them going and then turn the gas off? Once the briquettes get going don't they just continue to get hotter on there own (half way grey as we call it) or do you just like to speed up the process by leaving the gas on longer?

Originally I pictured a few briquettes scattered around that lava rock people use.
 
What is the "bean sauce"? Never heard of it, looks great!

Black beans or any beans really will work.
Garlic, Olive oil, I like to add Mexican flavors and just simmer.

Sometimes I'll make a steak in the oven and just pour it all on top about 5 minutes before the meat is ready

Keeps the meat moist and the juice is good for slopping up with seeded twist bread

Yes thats how i do it. Close the gas when they get hot.
As the coals burn down i open the gas to low if i need to throw on more food

You may have seen my new concoction. I call it steak soup. Now chicken soup I guess since I can't eat red meat anymore. :(

It starts on night one where I cook up steak shish kabob (sometimes shrimp too) and eat that normally with rice or whatever. I make extra of course for night two. On night 2 I cut all of that up and mix it in with black beans, cumin, a bit of salsa, and some more spices.

These are my favorite black beans right now. I can actually eat these without straining them, which I would do with a normal can of black beans.

when i was in the navy they sometimes made something similar to that to shut to the Louisiana and NO crews

possibly on the gumbo, but gumbo to me uses a roux made from flower and animal fat. I used to use bacon grease that I use to collect. Due to celiac, I had to use rice flour, for example, and it just never turned out right. Now, no more bacon grease either. So to me it is more of a goulash or soup. Leftover soup using cans of beans some tablespoons of salsa or whatever else I have laying around.
