i broke down around 25-30 turkeys (the rest of the team did about the same), roasted breasts, did a super simple braise on the dark meat for the private club i'm a chef at. then i came home and have been working on my thanksgiving since sunday night. This is the world series of cooking folks...i play to win. Its all well and good to crank out a thanksgiving meal. house wives have been doing it for decades. i'm in the business of making the BEST thanksgiving you've ever had.
