Get rid of the JJ power tubes.....

Yes. Unless you run the amp at really high volumes, the Greenbacks will be fine. However, there are alternatives out there that are higher wattage. They don't sound exactly like a greenback and have their own flavor happening. I can't say where to find them. Perhaps ebay? They will say Made In Ipswitch England on them, I think. You could look round for some used ones. I use M75's. They're great speakers and will help roll off some of the spike but I don't think they're the answer to your problem. Have you tried the head with other speakers/cabinets? That is the perfect tone for just pushing the front end with an overdrive pedal. It can be modded but I'd start with that. Try a Timmy, OCD, BB Preamp. If you are still interested, Celestion makes a Vintage 30 for Mesa Boogie that are made in the UK. They are available through them.
