Smoked two kinds of chicken for dinner tonight. Wings on the top are a Nashville style while the chicken on the bottom rack is milder and sweeter.

Any thoughts?
 
That chicken looks outstanding brother. I made some smoked chicken thighs on my smoker a couple weeks ago. They came out like tandoori chicken red, so vibrant. I love the coloring on yours. What sauce did you use?
 
Is that onion and beef kabobs? What kind of marinade did you use on the steak? Have you ever tried making kufta? They're really tasty too.
I use a lot of chinese soy sauces, fresh garlic, ginger and pepper mostly

Done with brining for a day or two. Nashville - any cayenne pepper sauce like franks, sugar, salt, Worcestershire sauce, garlic, pepper, pickle juice and a little oil. Other one is sugar, brown sugar, sugar, brown sugar :D vinegar, onion powder, garlic powder and a little oil. I think the Franks and Brown Sugar is really what gives the color/taste like that for each type.

Traegar Prime Rib Rub is my favorite for color. I've only used it on beef/lamb but it gives such a beautiful color. Throw it on and magic.

Can I come over? Looking good! I've never done kebabs. Got any suggestions?
I use a lot of chinese authentic ingredients with my kebabs, for asian flavors. I use sirloin, cut small and try to make veg to meat ratio equal. Here are some of my favorite sauces. I like a lot of fresh ginger and garlic too.

Whoa! I didn't even realize there were so many different kinds of soy sauce. Thank you for the advice. My proportions are probably meat heavy and I need to alter that a little.
