Epic.I make my own... I baked this bread literally yesterday. It's 10% WM Rye, 10% WM Wheat and 80% high protein baker's flour. 2% salt by flour weight and 76% hydration by flour weight. Bulk ferment is 6.5 hours at 24.5c and a 18hr retard in the fridge before baking straight out of the fridge.
