No fancy cooking this week. Just straight up steaks, mashed taters and corn last night. Wife's making a sorta fancy goulash tonight. Fresh onions and garlic sauteed, tomato soup, ketchup, bunch of seasonings and spices hamburger, sausage, noodles. Then when we plate it I'll toss on another heavy dose of my spice mix and smother it with cheese. Sometimes she'll do that for me before I get home and toss it in the oven to let the cheese bake on. Simple but fantastic.

Dude... I told you to wrap them in foil. See all of the juice in the pan? The dry rub breaks down and tenderizes the meat, which releases juice, which then marinates said tender meat - in the foil. Then you rest, unwrap, lather with sauce and do a quick sear over the grill.

Mine have been WRAPPED IN FOIL :LOL: :LOL: since Sunday afternoon and are hitting the oven today. I'll show you... :gethim:

Tossed em in the oven.
Whole pan was wrapped in tin foil. I just cut the rack in 2 pieces.
Cooked em 1:45 at 325.

This, Mailman, is how you do it. Four racks, cut into thirds, rubbed & wrapped just before hitting the oven.
