Was gonna post a Landau follow-up in the Henson thread but figured guys like Huff, Landau, and Luke should have their own.
If you never have before, take some time and scroll through each of their recording and producing credits. It's gonna take a while!

Another guy everyone's probably heard without knowing it.

Steve Hunter
The story I heard was he and Aerosmith were both using the same studio. Aerosmith had gone out to eat or smoke a bowl or something. The engineer asked Steve if he would like to play a solo or two over one of Aerosmith's tracks. So he walked into the booth and laid down some solo tracks. The rest is history.

His acoustic intro to Peter Gabriel's Solsbury Hill is sneaky hard to play with that bouncy feel. Threw me for a while.

Landau's Tale From the Bulge was brought up. Some of the tastiest and best recorded playing EVER. No hyperbole.
Lot's of cool stuff going on that may take a few listens to sink in.

If you have a really high fidelity sound system this is an album that will blow you away up LOUD.

Hunter's all over Get Your Wings. I heard his long time partner Dick Wagner also has licks on it.
God how it must've sucked for Perry when Train became a huge hit - the excellent solos a big reason. ?

I freaking love songs that people can groove to, yet they have weird timing to count. Solsbury is a great example.
Take someone who doesn't know music for shit and they can sway to it on the first listen.
But like you said, you try to play it and it almost feels herky jerky with no swing at all.
Nuts.
