From personal experience:

1.) That's the wrong cover. The 35 cover is too big.
2.) Don't waste your time - the covers are too thick and the PU will be 7 miles from the strings. Unless you're using an Invader or M7, you won't get any output.

The real solution is these:

However, until you get them, simply bend the tabs in on your PUs and surface mount them. That's what I did on my Jackson SLAT3-7 - since I hate EMGs, as well.

If you're considering the NT-7, at least take a swing at the SLAT3-7. No ebony and has a Floyd, but more or less the same guitar for less $$$. Mine is outstanding.

Thanks for the correction. I never tried it, but a bunch of people said to buy the 35 size cover for 7 strings and 40 for the 8. At least now I don't have to waste my money.

Ya, this is helpful, as mentioned, it looks as though I'm veering away from the ESP overall anyway. I am realizing the EBMM Petrucci 7 BFR is a sweetass guitar, I'm finding out the price this weekend or Monday through my guy. If the price fits, here we go again... Gonna be an expensive month - Axe II, Hagen, 7 string - so it goes.
