why is guitar signal chain still analog?

Hello together,
even if I am a tube fan, I am wondering why the industry is still on analog.
My thoughts are, wireless ADC, modeller ADC, digital FOH ADC, IEM ADC ...
Wouldn't it make sense to keep it digital?

Would at least reduce the conversion time.
 
Roland GK-5 is digital; so far only works with the Boss GM-800 AFAIK.

yes, but that is a different concept.
I was more in a direction like S/PDIF which fractal has in their units.

I think that a GK-5 pickup that provides a digital signal from the guitar is a good starting point; a direct digital processor to receive that signal - e.g., convert the digital signal to S/PDIF / or a direct computer connection (e.g., GK-5 to USB 3) would be next in the signal chain...
