Nona saying it like it is...... and speaking the truth...... this Italian grandma is the best :LOL:


 
She never once complained that toppings were distributed right up to the edges of many of those pizzas.

Just sayin' 'cause that's how I like it.

I mean, who wants to eat that much "plain" dough?

The thing is Neopolitan pizza is the real pizza......


Many don't understand this...... everything else is just an iteration of the original.


Not saying its the best or perfect when you go back to the first pizza as we know it today...... the roots get traced back to Naples and the Neopolitan way.
 
Yup, I know bro'.

I love a well-made Neapolitan-style pizza and appreciate the "original" design of it, but even then, I still wish for a wider spread of the topping.

Best not to mess with the tradition 'though; I get that.

I wasn't kidding.

Back in the day, whenever I ordered pizza, triple pepperoni was the minimum requirement.
 
Honest always talked shit on Anthony from Uno Pizzeria Napoletana...... but that was out of being an envious dumbass...... now that I think about it.....




But dude does amazing work...... his own way and does some of the best in the world....... this is what every Chef/Pizzaiolo aspires too or should aspire too.......to make the absolute best they can and nothing less....... God Bless Anthony and a real inspiration to the rest of us........



 
ImO what Anthony says who is Italian American and other Neopolitan Pizzaiolos say as well is true......


Its hard to make tbh...... it takes time and patience but once you get it down........ there is nothing better than pure dough using nothing but water, salt, yeast and flour and nothing else....... you don't need to complicate it or add more...... it may be easier for some to do so....... but nothing is better than going using pure ingredients and nothing less than that......

And Ive always been about fire/wood and the old way vs gas and other technologies that seek to replace the old way.......... but times are changing and one day I hope to use all Ive learned in the old way...... with these new technologies like this to keep bringing the old way back...... and keep the real traditions alive.....



Traditions are important but times are changing and Electric Ovens that can push the high temps required for Neopolitan Pizza may be the future...... while respecting and promoting real traditions as best as modern Pizzaiolos and Pizzaiolos can in general........ its all about the tradition whatever you use to produce it...... nothing comes before the tradition and it must be respected like years past...... now...... and years, decades and centuries to come from now......

I have to say it wasnt bad and it had plenty of carry.......


Got filled up quick..... gave some to some kids that were hungry too as two to three slices were more than enough for me on my break.


I feel why people like them, they are filling but in another sense as Nona said its a bit less digestible as its more bread in general it fills up the stomach quick and its more cheewy. Overall I liked it and it wasnt bad but am more partial to the Neopolitan way.


It was good though and yeah that pepperoni was pretty good even though I don't eat pepperoni all the time..... its not so bad every once in a while. If I do eat a pepperoni pizza its always got to be with ronis or the cupped versions...... its the way to go for sure ^_^

Yeah it wasnt so bad..... I mean it did fill me up and tasted great!!! May make some more like that when ever I want to be really filled up or for my brother who really likes them like that too and the American way :LOL:
 
I know it's a terrible risk saying this, but I actually like pineapple if there's a lot of pepperoni.

It not only "cuts the grease" of the pizza, but the water and sweetness it adds compliment the saltiness, heat and thirst-inducing nature of the pepperoni.

IMHO. Each to his own.

Don't get me wrong, pepperoni might be mandatory for me, but pineapple isn't... but I like it.
 
Salty/sweet has always been a great combo.
I think lots of people use too much pineapple which can be too watery/too sweet and fucks up the ratio
