I agree with everything you said, it would be extremely difficult to make everything exact. What we do in our studio for such tests is just have fun with it. First we set the head for a sound we like. Then decide on a 1 mic technique, so for example lets say we use an sm57 at a 45 degree angle...
If you ever get the chance i think it would be interesting to set your head the way you like it and then try that setting on each cab mic'd up and compare the recordings.
