About 180 using my hand as a temp gauge and live oak is what I have to smoke with...ultra low....ultra slow. But only for 6 to 8 hours because I'm not huge on thick bark and brisket stops accepting smoke after 160 degrees internal temp has been reached. I mitigate some of the work by foil wrapping it and running it at 250 in the oven for about 4-6 hours which also limits some of the extreme barking vs keeping it in the smoker. It should vibrate like jello when you poke at it with a finger when it's done. The tip is the proof test of your work. I'd rate my briskets 7 or 8 out of 10 most times. Better than most, but not as good as the best I've had.
