Any way to approximate the EVH detune effect to thicken my tone up using a single cab (mono) and without spending a ton of cash ($100 pedal would be great ?)

Even with the delay for the voices set to 0 ms, there is still some latency going on for the wet signal. So it's basically slightly delayed and pitched up and down respectively. +7/-7, +9/-9, +7/-9, +11/-13 are typical settings for left/right. You generally also have more delay on the lower voice (if you use the delay parameter at all).
When going mono, I suggest just using one voice. I prefer the lower one.

I too am the lone rhythm/lead guitar player in a hard rock band and want to try this effect to thicken up the live tone a bit.
What’s the latest pedal people love to get this effect that isn’t a huge pedal and isn’t crazy expensive?
