It's a deselection process, like dating. My thoughts:
ultra - Pretty solid amp. Maybe a little too compressed sounding, but near the top of the heap for all-around. Best value.
classic series - A Classic 50 head would be my #1 choice for what you are describing. You won't get 5150 gain, but everything else is good.
ultra plus - See Ultra. Plus the color changing logo is cool when you switch channels.
valveking - never played one.
XXX/3120 - XXX was awful. I would much rather have anything else from the list. Congested, dynamics change when you flip switches. Yuck
JSX - OK, but too bright and thin for my taste. Supposed to be a classic 50-ish sound on the 2nd channel.
5150/6505 - Best gain sound of the bunch, hands down.The clean sucks for clean, but gets a cool pushed sound and also crunch w/ button pushed.
butcher - never played one.
Also, Peavey made an amp called the Ranger. It was supposed to be sort of an evil Fender Twin. It's a pretty solid amp, too and comes in a 2x12 format. The Delta Blues 210 is/was a cool amp and sounded great through a 4x12, too.
For what you want, I think an Ultra/+ or Classic head would serve you well.
