Are you double tracking the guitars? If you are, actually, even if you're not, drop the amount of perceived gain in the room. Close micing tends to accentuate the gain amount anyway and the more gain you add to the amp the more compressed it becomes.
Record in 24 bit and keep your level at about -8db. If you try to "use all the bits" on the way in, particularly if you're using the quality preamps that come on most interfaces, you're hitting the preamp too hard and for some reason I believe the signal gets compressed and grainy. I've tested this and sah5150 also had the same hunch when I mentioned it to him and he validated it. He's even using a Great River preamp, so it's not just the preamp. Leave some open headroom.
