You can do that with any 100 watt amp with 4 output tubes. It's not just the Einstein. The only amp you couldn't do it with would be the VH4-S, because of the stereo-ness of the poweramp.
Today I changed the EL34 by a matched pair of JJ. I let the two outer tubes only, all is working, without adapting the impedance.
I've tested some preamp tubes and my choice is : 2 JJ ECC83 in V1/V2 (brings rich mids with very good noise isolation) and 2 General Electrics JAN (NOS) in V3/V4 (sounds bighter with more hi-mids and excellent definition), it sound better for me, with more mids.
