For single cuts it would be between my friend’s ‘56 Les Paul, my other friends ‘69 Les Paul Custom Black Beauty and my ‘57 Les Paul Jr. I’d probably choose the ‘69 LP Custom of those 3, but it depends on taste. My ‘64 SG Jr would be competitive with those too, but it’s technically a double cut away
For Strat style guitars it would be by far my same friend’s ‘57 Strat. For super Strat humbucker style guitars it would be the all maple ‘90’s ESP I just got. Maybe a GNG would be up there too, but haven’t gotten to try one yet
Also, you didn’t ask for it, but for tele guitars it would be this ‘63 Esquire I tried recently. From my experience the very best in any category of these guitars tend to all be the real deal vintage ones. They may be way overpriced, but once you hear the difference in side by side comparisons you can’t unhear it from there onwards. It’s generally been the same experience for me as well with amps, pedals and most categories of gear. Actually it’s with pedals where I find the biggest difference in quality with vintage vs modern ones, particularly with fuzzes or something like that Boss CE-2 chorus pedal
