Even though I make proper Neapolitan pizza dough with 00 Caputo Pizzeria I don't use fresh mozzarella. I actually prefer harder mozzarella - it has a stronger flavour and browns the way I like it. I still use Mutti Italian tomatoes with salt for my sauce - that part is authentic Neapolitan style. I have fresh basil in my garden and often make it into a pesto without the pine nuts - just olive oil and basil etc... So I mix that into my sauce sometimes which is a substitute for drizzling oil and putting basil leaves on at the end. So it's still pretty authentic in terms of the ingredients. I don't use instant yeast - I use sourdough starter... So it's actually sourdough neapolitan pizza.
