Which would be easier to build?

They are different amps. If you like that clip then get the 18W Plexi. You could also look for clips of the Marshall 18W (not the 18W plexi) and see if you like them.
 
valvestorm has a walk through guide thats useful. Personally even with instructions, layouts, and schematics I end up having questions. Have you ever done a pedal? There are a million things that can go wrong during a build so I would go with the one where you can get some support if you need it. I just finished a Plexi about 2 weeks ago which is my 5 or 6th completed(and working) amp. It's addictive as hell and expensive. I first started just cause I wanted a cheap amp but now I know thats not the case. If you are doing it to save money you will be better off buying a built amp.
 
I ultimately want this, , which is the Tube-Town model with the attached mods.


Then build that amp with those mods. That mod basically gives you a hot rodded JCM800 type circuit when plugging into the second set of jacks.

The Trinity is a strait up Plexi style amp with not a ton of gain. I think they might have an option to add a cascade switch, but it doesn't sound that great. (I've owned this amp )

edit: I mean the cascade mod doesn't sound good. The amp in plexi mode is not bad.

No idea about Tube Town build docs or support, but the Trinity docs and support are great.
