Do wings/sides on neckthru guitars matter?

Having played enough similarly spec'd neck thru guitars by now, yes the side wood matters. I'd run away from any luthier who claims otherwise.
 
Depends some on the guitar. On some neck throughs depending on bridge type and neck width the bridge will be mounted to the wings. For example, I believe a Carvin SC90 with tunematic bridge is mounted to the wings.
 
if you want dark alder, if you want something that is really well rounded then do basswood. I know... I know... Bassswood.... But guess what? If you're playing a 7 or 8 string guitar and death metal you probably want a more processed even tone so basswood is a good choice for that.
 
All of my favorite guitars has basswood bodies (but also have maple bolt-on necks).

Even if you're on a budget and get a good used guitar, make sure to budget for some really nice pick up's.
If the guitar you get plays nice but it's lacking tone, punch, or clarity or all of those, then look to cheap pup's as the potential cause.
Save money on lower cost guitar and then spend a bit on getting the electronics up to high level quality.
A lot of Epiphones are nice guitars and many play well, but many also have lackluster PAF "style" pups.
That description can tell you a lot about why the tone doesn't match up to the playability.

If you're having a guitar made for you make sure to spec proper good electronics and pup's.
Good wood is the basis on what the guitar tone will be built on.
But even good wood can be ruined with cheap electronics.
After all, electrics aren't meant to be played like an acoustic where the wood absolutely matters and is the primary, secondary, and everything to the tone.
With an electric I place more emphasis on electronics as that is what takes the guitars wood and inherent tonal quality and then amplifies that along with the strings while the electronics also add their part.

Yes, it ALL does matter. But on a budget means you need to make sure the most important aspects are not skimped on.
 
Do the wings matter? YES they matter. Can you tell how they will sound based on wood type without hearing the finished guitar? NO. The truth is, everything matters. Take any guitar and touch the headstock or body to a piece of furniture and see if the tone changes, YES the tone changes. That is basically the affect of wings in a sense. The only problem is to know what is going to sound better, but it's impossible to know until a guitar is completed. That is why similar guitars do not sound exactly alike, two LP's will sound different for example.
