I haven’t watched the video, but by the comments it feels like the age old argument of in the room vs recorded sounds. One is not better or worse, they’re just different. In the room with a cab is going to sound different than adding the additional mic, then Preamp, then recording device and playback. Then mixing in a song. I gave up several years ago getting in any discussion when someone says a Modeler just doesn’t feel right because it can’t get that in the room sound. It’s not supposed to unless you disengage the power modeling and use it as a Preamp out to a power amp/guitar cab.
I actually tried this recently and did a clip of it (below). In the bedroom, using the Helix as a preamp into my M180 power amp + 412 cab actually felt pretty decent & I was happy with it. However a week later I did the same thing in the band, and compared to a real amp it was embarrassing. Even with the M180 which is a IIC+ Coliseum power section the Helix commanded no push and was a challenge to hear in the (loud metal) mix where we're used to my amps moving a lot of air.

 
You guys are missing the obvious thing here. Do like I do and tape microphones to your ears. That way you are recording the same tone you hear in the room no matter where you move around.
 
This is kind of in the same territory as 'dialing in an amp without a mix is pointless' .. IMO of course

That is if you even care about playing with other instruments.

Some guys just want to rock out with a guitar and amp and that's perfectly cool too
 
I like to PLAY guitar. I don't wanna work when I play.
If I ain't digging the tone in the room in front of my cabs, I don't wanna play.
I was a working musician as a teenager in the 80s. I didn't enjoy the work, just the perks.
For me, playing is fun. When it's work, it's no longer fun.
 
That’s why I use 421 . It seems to grab the room my ears hear best
